You won't get hacked, because the pass gets changed every time, but how will we remember it? In-case we need to go into RCON urgently, but the pass gets changed?

Changing the rcon password every 2 seconds is not a very good idea.
You could just disable the rcon console from server.cfg and only allow admins to login by using OnRconLoginAttempt.
