In-game, I press the default button for screenshots (F and it displays the message. I check in my documents folder, where it is always meant to be, but it is not there. Is there a way to fix this?

Try disabling your UAC or try running SAMP as admin

Your Documents < Grand Theft Auto San Andrea's User Files < SA:MP < Screen Shots
[Were Your GTA is located] < Data < SA:MP < Screen Shots.
