If this won't help, try to run SA-MP Client using compatibility mode on Windows 98/XP. Also what you can do about it to fix this problem is checking up the system settings regards hidden folders, read about it on the internet and let us know.

Right click on gta_sa.exe (in your GTA: San Andreas folder), then click on "Properties", then "Compatibiliy", then select "Run this program as administrator"

Do a full scan of your drive and search for the file "samp.cfg"
It's a unique file, so you should only get one match. In the folder you found it, there'll be another folder "screens". There it is.

It'll likely be in your public folder instead of your "My documents" one

My screenshots, chatlogs, saved positions, etc, save here: GTASA DIR/data/SAMP

No, the dir is correct:

But it don't save the screens.

As I said in my previous post, your screens are saved in the same folder as the samp.cfg .
Right-click, "Open File Location" (above properties) and you should see a subfolder "screens"

Mine also saves in C:\Users\daan\Documents\GTA San Andreas User Files\SAMP\screens Also with Windows 7 Professional. Anyway search for the saved Screenshot.

When I said where mine save earlier, I was sort of asking you to check there at the same time..

My files used to save properly where they should in Documents, but then they suddenly stopped..
And now they save here (C:\Program Files (x86)\Rockstar Games\GTA San Andreas\data\SAMP)
samp.cfg saves in documents, but screenshots, saved positions, etc, save in the above directory.
So, have you tried checking there?

Do a search for sa-mp-000.png or sa-mp-001.png and see if the file turns up.

Do you have enough disc space for a new screenshot?
