I love this theme, but I apparently have no idea what instrument is using, I know, there's a guitar and some drums, but I can't recognize the other one, I thought it's a bagpipe or a flute.

A violin can't get those low tones. It's a...viola. Basically a slightly larger violin to get lowers tones. The one used in the video is a synthesized one btw. Here's a vid with a viola playing IRL, as expected a classical play of Handel
