Is it possible to make the screen black grey white? So just removing all colors.

You can use textdraws, you can easily generate textdraws with Zamaroht's Textdraw Editor

I think he means to display the normal game in black and white /greyscales, and not just to fill the whole screen with a black rectangle.
This is not possible with textdraws or in any other way i could imagine then.

Fair enough if the OP intended to ask that, but I provided the correct answer to: "Is it possible to make the screen black grey white? So just removing all colors."

it just have to be a look a like your watching in a black grey view like an infrared cam or so

You need to generate a hexdecimal colour (with opacity) and canvas the entire screen with the textdraw, but it is possible with the textdraw editor.
