Your own, dont start using edits as most of them are filled with junk code and things you don't need.

You can usually learn from other scripts and the SA:MP forums do have guides for beginners on how to script.

Usually you find good scritpers that will script for you.

I would say Public Enemy No.1 (Pen1), yeah i know its old. But you can learn very much from this mode.

As you script, you will learn more about the language. What works and what doesn't and ways of optimizing your code as you go along. As the previous poster said, attempt from scratch...what's the worst that can happen. There are tutorials all over the forum and such as well as good documentation on the language.
