Anyone else missing the good old Fort Carson based roleplay servers? It'd be great to see one nowdays.

No, not really. A good server will allow players to choose where they want to RP; not force it in a certain town. An example of this is LS:RP - you can find RP all throughout the map(from LS all the way to SACF in LV).

Yes, regardless you can expect some good quality RP with those players.
There are players that hate LS and would rather be in the county, you can go find factions and RP with them.
