Linux is free to use, its also very light weight and can run on a few mb of ram, whereas windows needs a lot more. I would use linux on my pc if it wouldnt bottleneck it so much. Its the same reason why most phones run Android (Which is linux) - Its free

Well, linux servers are more practical for a wide array of reasons which include:
* Cheaper prices to host(since the OS is free and no license needs to be purchased)
* Linux servers are based on terminal
* Linux services add easy PHP / SSH access allowing for easy integration for things such as restarting server, modifying files, etc.

There's really no need to use Windows Server unless you require some very specific services like Active Directory or Exchange server, both of which are only required in large corporations.
