anyway to run more than one server (running 2 sa-mp.exe programs and having 2 servers running on your computer at once?

Yes, but they will have to run in different ports.

Set different ports in the server.cfg (e.g 777 and make sure that on your router you set "To" as 7778 (so all ports in the range 7777 to 7778, all two of them are forwarded)
