I don't understand seem to understand this stuff very much, but I'd like to try. So I'm wondering if someone could link me to what they think is the best & easiest tutorial to understand?

First thing you should do is learn Pawn and then the SA:MP API (functions/callbacks).

Start with the Pawn language here: http://www.compuphase.com/pawn/Pawn_Language_Guide.pdf

Yes, it is a lot of information to read, but learning to script is not an overnight process.
