How do I remove the GF mode to spawn with a Baseball Bat and change the skin?

It would be on gamemode init

If they is lines E.g: AddPlayerClass(1, 1958.33, 1343.12, 15.36, 269.15, 26, 36, 28, 150, 0, 0);

Then that is what you have to change/edit.
