For running a sa-mp server, does a dedicated server with these specs sound good?

AMD 2000+ (Processor)
1GB RAM (Memory)
2 x 40GB HDD (Hard Drive)
5TB Traffic
100Mbps Connection
Ubuntu 10.04 LTS (Operating System)

(I will also be running MySQL as Wamp or XAMPP because my server uses MySQL to store shit)

You don't need anything else for LAMP & samp server. 1 GB RAM is just enough.
And you don't need that much bandwidth. Although, bandwidth depends on how much players you are willing to host.
