A lot of those weapons are just cut Vice City ones

Cleaver
Machete
Buddy (stubby pump-action shotgun)
Tec9/Ingrams Mac-10 are the same as their San Andreas counter-parts

The "fingers" probably refers to a cut foam finger weapon.

Not sure what a second minigun model could be, AFAIK SA & VC share the same model.
Maybe one with 3 barrels? (LCS/VCS)
