Gamemode is compiled script running on your server.
You can run only one gamemode, but you can change it, you can add list of gamemodes in server.cfg or you can change them with /rcon changemode [modename] while in-game, but you need to login to rcon first by using /rcon login [password].
RCON password can be setted in server.cfg at rcon_password line.
