Its better because if you know what your doing you can run a server for days and when you have to do updates you can do it on spot without having to reboot the system most of the time. The other reason is it can handle more than a set amount of RAM like for instance I have a Linux Server with 30GB of RAM on it and it sees the full 30GB while as the poster said he was doing dedicated hosting and asking if Windows Server was better than Windows 7 so he seems to not have knowledge in this. I will say this though with a Windows server it has multiple editions that have preset RAM limits unless you want to go spend that kind of money just to use that extra ram while I can use one distribution of Linux and use the whole system for free.
