Recently, my server got hacked by a rogue staff member.
He deleted all files and I had no backup, apart from the script.
So, my question is, when I save files ingame, how do I make them files save into something else so it's backed up twice? Onto cloud storage or something?

I recommend to save your backups to your computer, you can ask your hosting provider about automatic backups, unless your homehosting a server you'll just have to back up the files your self everyday or weekly however you'd like.

You can save your files, backup your files in your computer. You can use secured, encrypted online storage system to protect your files.

When using a home-host, VPS or dedicated server, you can setup scheduled administrative tasks to copy a backup of the folder(s) and set it read-only/hidden.
If using a game server provider, they might offer a backup system but you can't really count on it. It's best to ask the support or take manual backups.
