Hey,
I can't remember word like this:
If I make a new version of software I say "software name v1.2 Released!"
But if I am talking about my server, what word should I use instead of Released (cause I'm not releasing my GM, it's just new gm version which is used only in server)..
Like "server name v1.2 *?*"

Are you looking for a word like 'updated' 'renewed' or something like that? Because 'servername v1.2' is just as good...

Launched, dispatched, commenced, initiated.
You can say released because you're releasing the new version for yourself and your members to play on, not necessarily to the whole SA:MP community.

Use 'Launched',it's the best way to say what is up.
