Is there any way to script it so that when ammo reaches 0 I can still have the weapon and it creates a toy or w/e to replace that weapon?

as far as i know , you can get player's weapon when it is 0 but it will no longer be in your hand - its SAMP rules i think but you can do it in this way.
When player's gun ammo is 0 you can get the gun id for example Deagle , and create an object "deagle" and attach it to player's hand or body where u want to
