You chose your operating system. It's up to you even though I suggest you CentOS because it offers a bigger compatibility.

I would go CentOs, however you will need to run your server on linux.
Most likely you are used to windows i guess? Check out the wiki on how to run a linux server.

I would go with option 6,
Linux 32 bit, but 64 can do too.
