Hey guys, i'm sure this has been asked a billion times, i was just wondering if/how you can get 2000 players like the russian servers, or up to 5K, 10K, 100K ! etc.

In short no, SA:MP doesn't support over 1000 players yet that's why all those servers that get 1k players usually have more than one server.

The stability at 1000 probably isn't that good and you are expecting 100,000?

Scaleta has the right idea. Just because a 1000-slot SA:MP server package exists, it doesn't mean that it's stable. It would take some really serious optimization in order to be able to handle such a massive amount of players on a single SA:MP server.
