IBP Roleplay. LSRP is also good, it's bigger but has an application process, although the quality is kind of dropping.

1) ****** / SA-MP search parameter Kalcor has so graciously added for us
2) Extend your fingers to over the keyboard
3) Type whatever comes to your mind
4) Enjoy the first server that comes up

There's not many hardcore roleplaying servers around these days, some are quite unknown.

Maybe True Roleplay but everyone seems to be leaving it for some reason, their script is amazing though.

What's wrong with it? A lot of the players are former or pre-LSRPers.
