You'll have to create everything from the start, since there isn't a backpack system in GTA, however I don't think you have the scripting skills required to do that.
You should start with something more basic.
Anyways the way you would do it is with text draws, but it would take to long to be able to create it since you'll have to create every image to every item you could place in your bag.
