What's the minimal requirement for a server on VPS ~ 100 slots?

There are not really any "minimum requirements". It depends how much your script processes at once. The connection speed will need to hold 100 players at once though.

Can I run two servers on a VPS with this configuration?

Technology: OpenVZ
RAM: 1GB
CPU Speed: 1.8 GHz (Intel E5520)
100mbps

I think you can.. It kinda depends on the scripts your running and so on

RAM: 1GB
Bandwidth: Unlimited
CPU Cores: 1
CPU Speed: 1.8
