I have this old Powerbook G4, And I want to use it to host a server or something.. but there isn't a mac version of the server.. help?

There will be issues with plugins if you can get it emulated. ****** Wine emulator

I can't, It is a PPC mac, Not an intel.

But try Wine Emulator. I have a feeling that it'll work for the server.exe , but I know that plugins will have issues/not work.
