In wich TXD or IMG or other file can i find the Health Bar and the armour bar. !?

It's a textdraw, not an image.

Maybe you can better go to GTA Mod Sites.
Whatever I think it's in the script (main.scm - located in {GTA SA DIR}/data/script)
Try looking arround there (use the scm editor - Sanny Builder)
